Gari from Togo is a finely granulated semolina of white or yellow color obtained from the pulp of cassava crushed, sifted and then dried over a fire. It is carried out by the women of Tsévié (maritime region) and Kati (plateaux region). It is a gluten-free food and is rich in starch.
